Ingredients
1 cup (226g) unsalted butter, melted
1 ½ cups (300g) granulated sugar
2 large eggs, room temperature
2 tablespoons fresh lemon juice
1 tablespoon lemon zest (from 1–2 lemons)
1 teaspoon vanilla extract
2 cups (250g) all-purpose flour
½ teaspoon salt
½ teaspoon baking powder
For the Lemon Glaze (optional, but recommended):
1 cup (120g) powdered sugar
2–3 tablespoons fresh lemon juice (adjust for desired thickness)
½ teaspoon lemon zest
Instructions
Preheat your oven to 350°F (175°C).
Line an 8×8-inch or 9×9-inch square baking pan with parchment paper or lightly grease it with nonstick spray. Set aside.
Notes
Don’t overbake: For soft, gooey texture, bake just until the center is set and a toothpick comes out with moist crumbs. Overbaking will make them dry.
Zest before juicing: It’s much easier to zest whole lemons before you cut and squeeze them.
Fresh lemons matter: Use fresh lemon juice and zest for the best flavor—bottled lemon juice won’t deliver the same brightness.
